[Recipe] Slow Cooker Creamy Curried Chicken with Ginger

This easy slow cooker recipe brings together tender chicken, aromatic spices, and a creamy yogurt finish. Perfect for a flavorful, hands-off meal!

Ingredients:

  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 2 tablespoons tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon salt (adjust to taste)
  • 1/2 cup plain yogurt (for serving)
  • Fresh cilantro for garnish (optional)


Instructions:

  1. Prepare the Ingredients: Add the chicken thighs, chopped onion, minced garlic, grated ginger, curry powder, cumin, tomato paste, diced tomatoes, chicken broth, and salt to the slow cooker. Stir to combine.
  2. Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shreddable.
  3. Shred the Chicken: Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Return the shredded chicken to the sauce and stir to coat.
  4. Serve: Spoon the chicken and sauce over rice or your choice of grains. Top with a dollop of plain yogurt and garnish with fresh cilantro, if desired.
