[Recipe] Slow Cooker Creamy Curried Chicken with Ginger

Ingredients:
- 2 lbs boneless, skinless chicken thighs (or breasts)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 2 tablespoons tomato paste
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon salt (adjust to taste)
- 1/2 cup plain yogurt (for serving)
- Fresh cilantro for garnish (optional)
Instructions:
- Prepare the Ingredients: Add the chicken thighs, chopped onion, minced garlic, grated ginger, curry powder, cumin, tomato paste, diced tomatoes, chicken broth, and salt to the slow cooker. Stir to combine.
- Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shreddable.
- Shred the Chicken: Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Return the shredded chicken to the sauce and stir to coat.
- Serve: Spoon the chicken and sauce over rice or your choice of grains. Top with a dollop of plain yogurt and garnish with fresh cilantro, if desired.
